Eggplant and Zucchini Antipasto 290g

The Brazilian mum's homemade eggplant antipasto now served in a jar

For us, this is the taste of special occasions at home, where our mums combined eggplants, onions, capsicum and a good splash of olive oil.

In our version we added zucchinis to make it even more delicious and a pinch of chilli flakes to give it a boost.

Delicious on crackers, with bread, on your pizza or pasta

Ingredients: Zucchini, eggplant, capsicum, onion, olive oil, vinegar, fresh orange juice, garlic, raw sugar, salt, rosemary, white pepper and chilli flakes.
